Lemon Herb Tahini -Crusted Tofu with Roasted Vegetables

Tahini is a delicious and versatile condiment made from ground sesame seeds. It's a staple in many Middle Eastern and Mediterranean dishes and adds a rich, nutty flavor to any recipe. In this dish, we will use the lemon herb Tahini dressing from Secret Foods, to create a flavorful coating for the tofu, which is then baked to perfection. The tofu is served with a side of roasted vegetables, which adds a sweet and savory element to the dish. This recipe is perfect for a weeknight dinner, but it would also be a great option for entertaining. You can substitute chicken for Tofu, for a delicious chicken dish.

Ingredients:

1 pound Tofu (diced)

1/2 cup Secret Foods tahini sauce

1/4 cup bread crumbs

1 tablespoon lemon juice

1/2 teaspoon ground cumin

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 medium zucchini, sliced

1 medium yellow squash, sliced

1 medium red bell pepper, sliced

2 tablespoons olive oil

Salt and pepper, to taste

Instructions:

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a shallow dish, mix together the tahini sauce, bread crumbs, lemon juice, cumin, paprika, garlic powder, onion powder, salt, and pepper.

Coat the tofu in the tahini mixture, pressing it firmly to help it stick.

Place the coated tofu on the prepared baking sheet.

In a separate bowl, toss the zucchini, yellow squash, and bell pepper with the olive oil and season with salt and pepper.

Arrange the vegetables around the tofu on the baking sheet.

Bake for 20-25 minutes, or until the tofu is cooked through and the vegetables are tender.

Serve the tofu and vegetables hot, garnished with additional tahini sauce and chopped fresh herbs, if desired.

This recipe is a delicious and satisfying meal that's packed with flavor. The tahini-crusted tofu is savory, with a nutty and slightly spicy coating. The roasted vegetables are tender and slightly caramelized, adding a sweet and savory element to the dish.

One of the great things about this recipe is that it's relatively easy to prepare, but it looks and tastes impressive. The Secret Foods tahini sauce adds a lot of flavor to the tofu and helps to keep it moist and flavorful as it bakes. The bread crumbs add texture to the coating, and the spices add depth and warmth.

If you're not a fan of zucchini or yellow squash, feel free to use any vegetables that you like in this recipe. Some other options to consider include cherry tomatoes, asparagus, or eggplant. Just be sure to slice the vegetables into similar sizes so that they cook evenly in the oven.

Another tip for this recipe is to make sure that you coat the tofu evenly with the tahini mixture. It's important to press the mixture firmly onto the tofu so that it sticks and forms a nice, even coating. If you have any leftover tahini mixture, you can use it to coat the vegetables as well.

Finally, be sure to serve this dish while it's still hot with the tofu and vegetables on their own, or you can pair them with a side of quinoa, rice, or another grain. Try serving this dish with a simple green salad for a lighter option.
