Roasted Cauliflower with Lemon Herb Tahini

Ingredients:

Cauliflower 1 head – cut in florets

½ cup Secret Foods Lemon Herb Tahini Sauce

Coconut milk ½ cup

Lemon juice – half a lemon

2 tablespoons tomato paste

1 teaspoon garam masala

½ teaspoon tumeric

1 tablespoon garlic powder

1 tablespoon cumin powder

1 tablespoon red chili flakes

1 tablespoon coriander powder

3 tablespoons olive oil

Salt to taste

Additional olive oil to brush the florets before baking

Instructions

Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

Prepare the cauliflower: Remove the green leaves and stem from the cauliflower, then cut it into florets. In a large bowl, toss the florets with tomato paste, garam masala, turmeric, garlic powder, cumin powder, red chili flakes, coriander powder and salt into the bowl and mix together, adding in the coconut milk and olive oil in small batches until the cauliflower florets are evenly coated.

Roast the cauliflower: Spread the cauliflower florets in a single layer on the prepared baking tray making sure they are not overlapping. Brush the florets with olive oil and bake at 420 degrees for 30 to 45 minutes, or until the florets are golden brown and crispy, taking out the tray midway to rotate the florets so they bake evenly. Broil on high for 5 minutes to finish off with a nice golden color.  

Serve: Once the cauliflower is done roasting, let it cool slightly. Then, transfer the florets to a plate and drizzle or dress with Secret Foods Lemon Herb Tahini Sauce until well coated.
